The Chef’s Knife is the most important knife in the home or professional kitchen. Whether cutting, chopping, or slicing, no other knife is as versatile as the multi-purpose chef’s knife because it is a designed to perform a variety of common cutting tasks rather than excelling in one specific area. 

The upward curve of the knife’s edge allows for a rocking/chopping motion that allows for fast, fine mincing of small foods such as garlic, herbs, or ginger. The wide, flat blade is also excellent for pressing or smacking garlic cloves and popping them out of their papery husks. The chef knife’s extra width also makes chopping larger vegetables easy because it keeps your knuckles off the cutting board. In a pinch, it will even work for slicing and carving tasks due to its length and fine balance. For optimal cutting performance, try using a chef’s “pinch-grip” which brings greater control and efficiency when you slice, mince, or dice.

 

The whole knife is forged in a single mass of stainless steel. The steel Z50C13, Rockwell 54-56 HRC, is tempered, ground and polished crosswise to produce a high-quality tool, great cutting power, cutting hardness and balance.

OLIVE WOOD handles are manually set and mounted on the tang using three through rivets.

From forging to packaging, we guarantee that all our operations are performed in the Thiers region in FRANCE by skilled workers to ensure a professional quality craft finish.

 

Important point for olive wood handles: it is a natural wood. Do not wet the wood or leave it damp in order to keep a nice handle.

If you get it wet, the wood can warp or stain towards the steel tang of the knife.

It is recommended to use a wood polish on the handles (beeswax, etc.)
